Title: Catfish Chowder

Yield: 6 Servings

1lbCatfish fillets, cut into chunks
2slBacon, chopped
1cChopped onion
1cnSliced potators, drained
1cnCooking tomatoes, chopped
2cWater
1cnCorn, drained
1/4tsTarragon
1/2tsCelery salt
2tsParsley flakes
1/2tsOregano
1/4tsSalt
  Pepper to taste
1tsSeafood seasoning
2tsThyme

In a large pot, fry bacon until crisp. Add onion and cook until tender. Add potatoes, tomatoes, and 2 cups water. Cover; simmer until potatoes are tender. Add corn and seasonings. Cook slowly and adjust seasonings, if necessary. Add yhe catfish 5 to 10 minutes before serving and simmer.

Serves four.
